Description
La Cristalina has belonged to the Valdés family for four generations and spans three farms. This lot comes from San Pablo: eight hectares and 135,000 coffee trees in Manizales, Caldas, at 1,790 metres.
It is a highly technical farm run with the environment in front — a low-water wet mill, coffee pulp returned as fertiliser, and close to 20 % of the land left as reserve, planted with cedar and guava, to sustain the local bird ecosystems.
Overripe cherries picked at 24 degrees brix. Hand sorting. 24 hours of anaerobic fermentation in sealed tanks. Slow drying over 60 days at 30 °C in small silos, monitored for evenness.
EP preparation, 95 % above screen 15. Moisture 10.9 %. Water activity 0.59. January 2024 harvest.
